Teriyaki Beef with Special Fried Rice
Serves 5
Time: 45 minutes
Ingredients:
Beef:
· 1 kg rump steak (fat removed and cut into thin strips)
· 1/2 cup of cornflour
· X 2 shallots (peeled and finely diced)
· X 2 red peppers (cut in half, deseed, and thinly sliced)
· X 2 carrots (peeled, cut into quarters length way and thinly sliced into matchsticks)
Teriyaki Sauce:
· 1/2 cup light soy sauce
· 1/2 cup water
· 3 tbsp honey
· 3 tbsp brown sugar
· 3 tbsp mirin or rice wine vinegar
· 1 tbsp sesame oil
· X 4 garlic cloves (peeled and grated)
· X 1 thumb size piece of ginger (peeled and grated)
· X 1 tsp chilli flakes
· Cornflour (if you like your sauce a little thicker)
Special Fried Rice:
· 400 g brown basmati rice
· 1/2 cup peas
· X 2 eggs
· X 4 slices of ham (cut into 5cm squares)
· 2 tbsp light soy sauce
To serve:
· X 6 spring onions (thinly sliced)
· 1 tbsp sesame seeds
Directions:
45 minutes to go:
· Prep the shallots, red peppers, and carrots. Thinly slice the beef and set aside.
· Prep the teriyaki sauce ingredients (soy sauce, water, honey, brown sugar, mirin/white wine vinegar, sesame oil, garlic, ginger and chilli flakes) and combine in a pot
30 minutes to go:
· Put a pan (or pans) on high heat. Add a splash of sesame oil. Add the corn-starch to the beef and mix. Once the pan is starting to smoke add the beef and fry for approx. 5 minutes, constantly stirring. Set aside once all the beef is cooked.
· Boil rice as per cooking instructions
20 minutes to go:
· Put a pot on medium heat. Add a splash of sesame oil. Add the shallots and cook for 5 minutes. Add the peppers and carrots and continue to cook
· Place the pot with the teriyaki sauce on a medium heat and begin to lightly simmer. If you prefer your sauce slightly thicker, this is the time to add a little bit of corn-starch within a water mixture. Continue to simmer for 10 minutes and then remove from the heat
10 minutes to go:
· Once the rice is cooked set aside. Put a wok on medium heat. Add a splash of sesame oil. Add the egg and scramble. Add the peas, cooked rice, ham, and soy sauce and continue to fry.
· In the pot with the shallots, peppers, and carrots, add the cooked beef back in. Add the teriyaki sauce and heat through for one minute (not too long as then you lose the crunch from the veg)
· Serve the special fried rice and beef with a sprinkling of sesame seeds and spring onions
